Meat-free Meze...


I didn’t really know what I fancied for dinner last night, so I decided to make a plate of a few different things. Some days, its just nice to have a fuss free dish and this meat-free meze definitely hit the spot for me last night!


A combination of a few bought items: sundried tomatoes, a spoonful of coconut rice, sliced avocado and a few bang bang cauliflower bites (these are from Sainsbury’s and were lovely!), paired alongside some home-made lovelies: stuffed peppers (which I made the night before) so I just needed to reheat alongside some falafels (which I adore!) and my home-made mayonnaise (see recipe for this below). It's definitely worth making home-made mayonnaise and keeping a small jar in your fridge, when you do you won't ever want to return to shop bought again! #nomnom

Oh, and Meze, according to Wikipedia, means a selection of small dishes served as appetizers in parts of the Middle East, Turkey, the Balkans, and North Africa.


HOMEMADE MAYONAISSE RECIPE

MAKES APPROX. 330ML


Ingredients:

2 free range egg yolks

2 tsp of white wine vinegar

1 tsp of English mustard

2 tsp of Dijon mustard

1/2 tsp of salt

Ground white pepper

100ml of extra virgin olive oil

200ml sunflower oil

1/2 juiced lemon


Method:

Place the egg yolks, vinegar, mustards, salt and ground white pepper into a bowl and whisk well. NOTE: a stainless steel or glass bowl is best.

Mix the sunflower and olive oil together and gradually trickle into the bowl with the eggs and mustard, whisking continuously. NOTE: if the mayonnaise is too thick, add a few drops of water and continue to whisk.

When all the oil is incorporated, taste and add more seasoning if needed. Then to finish add a dash of lemon juice.
