Simple Suppers... what's in your repertoire?

Everyone needs some simple supper recipes in their repertoire… and this is one of mine: Stir-fried Vegetables with Soy and Oyster Sauce. See full recipe details below.
I often change the vegetables in this stir-fry dish depending on what we have in the fridge, but the base of soy and oyster sauce remains. It’s quick, easy and a firm favourite in our house. It also has a bit of a kick too from the white pepper, so be careful not to be too heavy handed when you add the pepper! #nomnom
For meat-eaters, this is a lovely one to have with chicken or beef too, cut the meat in to small strips and stir-fry for approximately 5 minutes in the oil before you add the garlic. Then carry on with the rest of the recipe as detailed below.
STIR-FRIED VEGETABLES WITH SOY AND OYSTER SAUCE:
SERVES 4 PREP 10 MINS COOK 20 MINS
Ingredients:
1 tbsp vegetable oil
4 garlic cloves, chopped finely
1 green pepper, sliced
1 aubergine, chopped into bite sized chunks
1 medium carrot, sliced thinly
Handful of green beans, cut into 2cm lengths
150g of mushrooms, large ones cut in half or quartered
1 large onion, cut into wedges
2 spring onions, cut into 2cm lengths
1 red or green chilli, cut into thin strips
1 tsp of white pepper
6 tbsp vegetable stock
2 tbsp soy sauce
2 tbsp oyster sauce
½ tsp sugar
1 tbsp cornflour, combined well with 2 tbsp of water
Method:
Heat the vegetable oil in a wok over a medium heat. Add the garlic and stir-fry until golden (approximately 30 seconds).

Add the mushrooms, green pepper slices, green beans, and stir-fry for 2 minutes, stirring continuously.

Add the oyster sauce, soy sauce and sugar and combine well with the vegetables. Then add in the vegetable stock and stir-fry for 1 minute.

Add the carrots, onion wedges and aubergine and stir-fry for 2 minutes.

Add the cornflour/water mix to the pan and stir through. Let simmer for about 2 minutes to allow the sauce to thicken.

Add the white pepper, chilli, and spring onions and stir-fry for a final 30 seconds.
(Note if you don’t like a strong heat kick, reduce the white pepper to ¼ tsp).

Remove from the heat and enjoy with some fluffy rice!
