BANGIN' VEGGIE KEBABS, thank you BOSH!

Yesterday evening I made BANGIN' VEGGIE KEBABS with a RICH SATAY SAUCE compliments of Henry and Ian and their BOSH recipe book.
Call me sad but I enjoy a recipe with lots of chopping, perhaps has something to do with relaxing after a busy working day and not really having to focus on anything else other than the food you are preparing - a form of foodie escapism perhaps!
This recipe was full of lots of great fresh ingredients and definitely gave us our 5 a day in one sitting: the kebabs included, aubergines, peppers, red onions, mushrooms and courgettes. Also did you realise that Chestnut mushrooms have lots of vitamin D in them #vitamins #healthylifestyle
The Satay sauce was nice too, which the vegetables were coated in before being made into skewered kebabs. I also made extra sauce to serve as a dip along side the kebabs. I was a little heavy handed with the coriander (I love coriander) so the satay was not quite as 'peanutty' as it was intended to be, although it was delicious all the same. In fact, I think I may have created my very own 'Following Charlie' dip with my slight adaptation of the ingredients! Perhaps one I will share with you in a future post.

I have read somewhere that the vitamin D content of mushrooms increases if you leave them in daylight until you use them. I must try to find my source for that!
