Rosa’s Thai Café – Mushroom Panang

Phanaeng, which is also spelled phanang, panang, and other variants, is a type of red Thai curry that is thick, salty and sweet, with a zesty kaffir lime flavour and just so happens to be one of my favourite Thai flavours.


There are a couple of Panang recipes in this book (Rosa's Thai Café - The Vegetarian Cookbook), this mushroom one and a butter bean one. This mushroom one which I made yesterday is utterly delicious! So much so, for future homemade Panang curries I won't be returning to a meat-based version. I made enough paste yesterday to ensure that I can also try the butter bean version tomorrow or Saturday. Watch this space!


I used a few different types of mushrooms in this dish: closed cup, chestnut and shiitake. Rosa suggests enoki mushrooms (which I couldn't find in our local supermarket). However, I think any mushroom will work, although probably good to have a few varieties to change the texture as well as add to the flavour of the dish. I served mine yesterday with a small portion of fluffy rice, homemade naan bread and a scattering of sliced chilli and fresh Thai basil (what a fantastic aroma Thai basil has!) #nomnom
